Creamy lemon garlic pasta with scampi

Ingredients:

  • 0,5 kg Spaghetti
  • 0,5 kg scampi, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh lemon juice Zest of 1 lemon
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Cook the spaghetti according to package directions until al dente.
  2. While the pasta is cooking, heat the butter and olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  3. Add the scampi to the skillet and cook for 2-3 minutes on each side, until pink and cooked through. Remove the scampi from the skillet and set aside.
  4. Add the heavy cream, Parmesan cheese, lemon juice, and lemon zest to the skillet. Stir to combine and cook for 2-3 minutes, until the sauce has thickened slightly.
  5. Add the cooked spaghetti or linguine to the skillet with the sauce and toss to coat. Add the cooked scampi back to the skillet and toss gently to combine.
  6. Season with salt and pepper, to taste. Garnish with chopped fresh parsley and serve immediately.
